Nepal-born chef and co-owner Dawa Bhuti leaves the Tibetan food to her father, keeping the menus separate. I first came in to sample a beet pasta I had seen on their Instagram feed. “We replaced the beet pasta with the poached eggs and smoked salmon,” explained Dawa, her eyes lighting up. “It’s served on this incredible little cake made with brown rice and kale, and topped with a homemade salsa verde. My father just brought the arugula from a farm upstate ... Oh, and you have to try the chicken sandwich, too.” From the authentic side, blood sausage arrives in a fiery sauce. Shabaley’s (deep-fried meat pastries) are topped with bright pink pickled onions for balance. The momo are delicately pinched into glistening half-moon dumplings and served in a fenugreek tomato sauce. The cuisine is exceptional, and the service impeccable. The menu changes frequently based on availability and the season.
