But it isn’t just the vegan and vegetarian
communities that Salazar hopes to reach.
The team behind Rosatoro has big plans to
make the restaurant a place where everyone
feels not just welcome, but also celebrated.
“Inclusion is a key aspect of Rosatoro. We
want to make sure all folks are welcomed,”
Salazar said. “We will host special events
during the U.S./Peruvian holidays, but also
special events including Wheelchair Day,
Pride Day and Mute-Deaf day, along with
many others. I am in a wheelchair and want
to make sure my fellow wheel buddies can
access Rosatoro and have a great time … I
can talk for a long time on how passionate I
feel about this topic, as you can see.”
In speaking to Salazar, it was clear how
genuinely passionate he is about making
sure that everyone who visits Rosatoro is
having a good experience, and this attitude
seemed infectious among the staff. All of the
team members were primed to talk about
the restaurant’s Colombian-brew coffee or
recommend a dessert (all of which are made
in house, they were proud to say).
The last piece of the puzzle for Rosatoro
is securing their liquor license.
“We have been waiting for over five
months,” Salazar said, but he anticipates
it will arrive in mid-January. “We promise
that the drinks created by the talented bartender
and general manager Kevin Sales
will impress our guests.”
Though there are no cocktails currently
listed on the menu, there is a bold but
believable claim in their place: “Rosatoro
promises to have the best pisco sours in
New York City.”
