Vegan Nachos

Try this recipe by Nima Pillai of The Conscious Bowl to see what you
think of her version of vegan comfort food.
Fries:
2-3 sweet potatoes (or purple potatoes)
1 tbsp flour (gluten-free if you prefer)
1 tbsp olive oil
1 tsp salt
1 tsp pepper
"Cheese" sauce:
2 medium regular potatoes
1 carrot
1 white onion
1/2 cup cashews
2-3 tbsp nutritional yeast
1/2 tsp turmeric
1 tsp salt (or as much as you desire per your taste)
1 tsp pepper
1 tsp cayenne (optional)
Recipe:
1. Pre-heat oven to 400°F.
2. Peel, wash, towel dry and cut up the sweet potatoes into
long strips. Dust with flour, olive oil, salt and pepper. Bake for
30 to 40 minutes based on how crispy you like them.
3. In the meantime, boil potatoes, carrot and onion till soft
(15 to 20 minutes). Add hot water to 1/2 cup cashews and set
aside for one hour.
4. Blend in a high speed blender: boiled veggies + cashews
that were soaking in hot water + nutritional yeast + spices. Your
“cheese” sauce is done!
5. Now's the fun part: On a plate, arrange the baked fries.
Pour the “cheese” sauce and go crazy with toppings. I love
adding salsa, cilantro, olives, jalapenos (extra, always), green
onions and, if I'm feeling motivated or fancy, guacamole!
