revealing her unwavering positive
attitude.
Her recipes are always flavorful and
contain many spices. “That’s definitely the
Indian in me: I have to spice everything,”
Pillai said, laughing.
Among her favorite foods are vegan mac ‘n’
cheese and nachos. “Just very flavorful food
that doesn’t make you feel deprived at all,” she
said. “Oh, and pizza — I love vegan pizza.”
Mac ‘n’ cheese, nachos and pizza. Those
aren’t usually foods we associate with
veganism — but it’s possible, and Pillai
wants to spread the word.
“Being vegan or being plant-based
does not mean that you’re only eating
salad,” she said. “You can pretty much eat
all of the food that you normally eat and
you can veganize them so no animals will
be harmed in the process.”
Pillai said if this could be her full-time
job, that would be the dream. For now,
she’s sticking to her Instagram and wants
to one day develop it into a more detailed
food blog.
“Everything can be veganized, so just
have an open mind and try it,” she said.
“Even if it’s a day, even if it’s a day.”
