She wants to put an end to the stereotype
that vegan food is bland, so presentation is important
to her. Open her Instagram and you’ll
find all colors of the rainbow, from a bright
purple beet-acai-cauliflower smoothie to an
electric green matcha latte.
Pillai swaps purple sweet potato fries
and a mixture of veggies and spices for
corn tortilla chips and queso in her nacho
recipe. She turns to this vegan comfort
food often because it's easy to make (and
packed with hidden nutrition!).
This nacho recipe was inspired by an Instagram
account called High Carb Hannah
(@highcarbhannah), known for delicious
vegan recipes.
"My inspirations for recipes come a
lot from my previous life as an omnivore
and experimenting with ways to veganize
some of my favorite foods," Pillai said.
"But also from some amazing content
creators on Instagram as well as food
bloggers and recipe developers online."
