38 North Shore Towers Courier n October 2014 dining in Judith Gilbert’s quick and easy desserts VIENNESE PLUM CAKE ½ c butter creamed ½ c sugar (or less) 2 eggs 1 c flour sifted with 1/4 tps salt and 1 tps baking powder 10 blue Italian plums, cut in half, pitted, mixed with ½ c sugar Cinnamon for the top Preheat oven to 375 degrees. Cream butter, add sugar, eggs (one at a time), beat.Sift flour with baking powder and salt. Spread batter in a buttered, 8-inch square pan. Place plums, skin side down, on top. Press into dough lightly. Spoon cinnamon and sugar into the hollow of each plum. Bake for 30 minutes. JELLY ROLL 4 eggs, separated ¾ c sugar 2 tbsp cold water ½ tsp vanilla extract ½ tsp lemon extract ¾ sifted cake flour 1 tsp baking powder ½ tsp salt Preheat oven to 375 degrees. Beat egg yolks with ¼ cup sugar, water and flavorings. Fold in egg whites beaten until stiff with remaining sugar . Fold in dry ingredients sifted together . Bake in a 10x14-inch jelly roll pan lined with wax paper about 15 minutes. When slightly brown, turn out of the pan onto a clean dish towel dusted with confectionary sugar. Roll up and allow it to cool on a rack. To fill, unwrap cake, spread filling and roll up again. For ice cream, put in freezer until ready to serve. For whip cream filling, place in refrigerator.
