Making the Grade
BY STEPHEN VRATTOS
Proprietors Buffy and Spiros
Dimas, and Angelo
Pantazis were awarded
an A-Rating from the New York
Health Department after more
than two years of tirelessly cleaning
and renovating the Towers
Restaurant.
The trio became the new lease
holders in March 2015 with the stipulation
they must not shut down the
eatery for more than 24 hours. At
midnight, February 28, they entered
the diner, keeping their contractual
promise and reopening Sunday,
March 1, despite being greeted with
a business in terrible disrepair and
cleaning neglect left by the previous
proprietors, who it was evident had
done little, if anything, to upkeep
the restaurant, since opening its
doors forty years earlier.
In the years since, the Buffy,
Spiros and Angelo have spent more
than a million dollars totaling renovating
and upgrading the eatery,
including stripping the kitchen
and completely re-outfitting it with
new state-of-the-art equipment and
safety measures (not previously
installed); and gutting the dining
area, refurbishing the space from
floor to ceiling, while making it
friendlier to scooters, walkers and
other ambulatory devices, in consideration
of the residents.
“It was never a question of ‘If,’
but ‘when,’” said Buffy, whose
fierce determination and strength
are evident in the three restaurants
in Long Island she and Spiros have
successfully taken over and rejuvenated,

here, giving them the service they
