Cleaning the kitchen and dining area were just the preliminary stage in what will be a total transformation for The Towers. To do that, the restaurant will have to close, but service will not be disrupted. Rather, customers will be served in Towers on the Green, the catering hall adjacent to the kitchen. But the first step is renovating the kitchen with all new equipment. The Dimas’s and Pantazis realize the importance of expediting the renovations as quickly as possible, but they are careful not to allow the need for expediency to override the proper execution of the job. Opening in the 1970s, the restaurant has seen little, if any, changes and its originators could scarcely envision the unique conditions and clientele they would need to accommodate in the decades following the fledgling complexes construction. Pantazis intends to make the design work better for the residents; create a more userfriendly traffic flow, taking into consideration the additional room needed for walkers and scooters, and installing electric doors to facilitate handsfree entry. Pantazis understands the restaurant is more than just a place to eat. “People are here all day; it’s where they meet and hang out with their friends,” he explains. “We want to make sure the design is not only functional, but also comfortable. “We want to make it work better,” continues Pantzis. “It’s not so much what we want; it’s what the needs of the residents dictate.” The menu will also undergo changes. As mentioned, everything served by the new operators is fresh and of the highest quality. This includes the plethora of pastries and baked goods available and all the stocks and sauces used in soups and entrees. Pantazis would like to add “food from all over the world,” such as Chinese dishes; additional fish options, like red snapper; even pizza.
