MERMAID It’s summer and you just want to sit back, relax, watch Ingredients: the game, maybe go for a swim, and sip on a nice refreshing cocktail. One of the most successful drinks on our original summer menu is what I called the “Mermaid.” It is the chilliest, most splendid summer cocktail if you’re craving something a little sweet and something a little earthy – yet still refreshing. I recommend using Hendrick’s Gin for this. I make a fresh batch of cucumber juice right before we open our doors at 6 p.m., but it usually runs out very quickly. Sasha’s first book “Rarely Known” was published in 2014 by Element Press and is available on Amazon. ■MIXING IT UP SASHA POGREBINSKY RECIPE 3 fresh cucumbers, Agave, 1 fresh lime, Gin Preparation: 1. Wash the cucumbers 2. Cut them into thick wedges and toss them into a blender (don’t peel the skin, the green gives the drink extra color) 3. Blend them with a little bit of water 4. Strain until you just have a nice consistent green cucumber juice Cocktail Prep: 1. Pour about 3 ounces of the cucumber juice in a shaker, 1 tablespoon of agave, squeeze a full fresh lime, add 2 ounces of gin, and add ice 2. Shake well until shaker turns icy cold 3. Strain You’ve not got yourself a delicious Mermaid cocktail! It can also be made with vodka, but I would recommend gin, as gin is the best liquor to use with cucumbers. You may even use Hendrick’s, which has cucumbers. Enjoy!
