BORO: What is a ‘trappist style’ gastropub? Matthew: A Trappist-style Gastropub follows in the tradition of Trappist monks using local, fresh food and incorporating beer into their recipes. From the beer batter and the mussels in beer to our Oatmeal Stout Panna Cotta, craft beer is a major ingredient in most of our dishes. BORO: Who are the owners (who are you?) Matthew: We have four co-owners (two couples): Tom Matthew: Davies and Carrie Spiller, and Carlos Beltran and Jennifer Waite. Along with Will and our fantastic servers and bartenders, that’s our team! BORO: What inspired the name Snowdonia? Matthew: e family of one of the owners, Tom Davies, are from Wales (Tom was born in London), and there’s a beautiful national park there called Snowdonia that’s home to the highest mountain in Wales— Mount Snowdon. e mountain and ski decor in the bar re ects this heritage. BORO: Why are there names on the bar stools? Matthew: e names on the stools are names of Kickstarter backers who chose that as their perk. BORO: Who is the chef? Matthew: Our Chef is Will Lubold. BORO: When/how/where did you nd him? Matthew: Will used to be a chef at ‘inoteca, a great restaurant on the Lower East Side. We met him through some mutual friends and were lucky enough to steal him away. BORO: I know you do an industry brunch on Mondays. What does that involve? Matthew: We wanted to do a brunch for all the actors and service industry workers who work weekends and never get to have brunch, but it’s open to all. It’s Mondays from 12p-4p, and the drink special is 2 bellinis, mimosas or bloody marys for $6 with a food purchase. BORO: What are your hours? Matthew: 7 days a week, 4pm-4am. Dinner is 6p-12a, late night menu is 12a-2a, brunch is Sat, Sun, and Mon from 12-4pm. BORO: If you could only have one item on your menu, what would it be? Matthew: Ooh, that’s a tough one. Will, our chef, does such truly amazing work that it’s hard to pick.
