■MIXING IT UP The PERFECT Coffee Cocktail One thing that is true about us New Yorkers is that we don’t SASHA POGREBINSKY slow down. The city that doesn’t sleep is full of people rushing night and day to and from work, busy with the things that make our lives special and unique – and like all real New Yorkers we consume a tremendous amount of coffee. So if you’re a coffee lover, you’re drinking doesn’t just stop with that morning espresso or the afternoon latte – you’re still feeling the itch for some caffeine late into the night. Here is an amazing cocktail called the “Carmelized Brandy-Pear Espresso.” It’s fun, creative and classy! RECIPE: Ingredients: 1 Pear Brandy Butter Honey Cointreau (or any orange liqueur) Whipped Cream Powdered Sugar Brown Sugar Caramelizing pears: Cut the pear into wedges (get rid of seeds, you can keep the skin on) Heat a tablespoon of unsalted butter in a skillet Add ¼ cup of sugar, stir until its dissolved with the flame on medium Add pears and stir them every once in a while After about 10-15 minutes, pour some honey on them and let cook in skillet for another 5 minutes You can use the pears when they are warm for the cocktail, or you can save them and serve them as a chilled garnish Preparing the Cocktail: Pour 1 ½ cup of espresso into a tea cup Add ½ ounces of Cointreau Add 1 ½ ounces of brandy Add a tablespoon of brown sugar and mix Add a nice frothy layer of whipped cream over the tea cup Drip a little bit of honey over the cream Cut the pears into small thin layers and garnish over the cream Garnish with powdered sugar Serve and enjoy!
