Guyanese German’s Soup  
 re-opens in Crown Heights

 Originally opened in 1960, the  
 German’s Soup, in Guyana’s capital  
 of Georgetown, is considered  
 one of the country’s most iconic  
 and popular dining spots. 
 In 2018, Clinton Urling, the  
 son of Hubert “German” Urling,  
 Sr., brought German’s Soup to  
 a small storefront in Brooklyn’s  
 East Flatbush, Brooklyn. 
 There,  it  quickly  became  a  
 popular destination for Guyanese  
 Creole cooking, highlighting  
 the diversity of the Caribbean  
 Community (CARICOM)  
 member-country’s population,  
 with  influences  from  Africa,  
 India, the Caribbean and China. 
 Having outgrown its East  
 Flatbush location, German’s  
 Soup has just re-opened in a  
 new, larger space, with expanded  
 menu, in Crown Heights, Brooklyn. 
 The re-opening marked the  
 60th  anniversary  of  the  original  
 German’s Soup, “which is  
 still serving everyone from local  
 workers to the country’s political  
 elite,” Clinton said.

 With a larger kitchen, he said  
 he has added new items, including  
 popular Guyanese snacks,  
 such as pholourie, egg balls  
 and roti flatbread, and sweets,  
 like mittai (fried cinnamon pastry  
 sticks) and squares of milk  
 fudge. 
 Clinton told  Caribbean Life  
 that the Creole dishes are based  
 on “closely guarded recipes”  
 handed down from his father. 
 He  said  five  “nourishing  
 soups” are built on a slowcooked, 
  yellow split pea base and  
 loaded with meat, plantains and  
 corn, among other items, “making  
 them  heartier  than  brothbased  
 soups.” 
 Clinton  said  the  signature  
 cowheel soup, chicken foot,  
 chicken, beef and a vegetarian  
 option are “always on offer.” 
 He  said  new  
 snacks include pholourie, fried,  
 spiced dough balls, served with  
 mango sour chutney. 
 Clinton said there are also egg  
 balls, hardboiled eggs covered in  
 crushed yuca, with sweet peppers  
 and parsley, then fried –  
 similar to a scotch egg. 
 Mains  showcase  Guyana’s  
 ethnic  diversity,  with  
 a rotating selection of curries  
 and stews, with a choice  
 of fried rice, raisin rice or plain,  
 plus lowmein and roti flatbread,  
 Clinton said. 
 He said snapper and chicken  
 come  either  stewed  or  curried,  
 alternating  during  the  week,

 on weekends. 
 Clinton said the popular BBQ  
 chicken is “best paired with fried  
 rice.” 
 Beverages include “housemade  
 mauby,” a fermented drink  
 made from the bark of the Mauby  
 tree, “with sugar and spices popular  
 all over the Caribbean.” 
 Traditionally fermented in  
 small batches, mauby is now  
 sold  commercially  as  non-fermented  
 soft drink or syrup to  
 mix with water. 
 “At German’s, it’s made from  
 scratch,” Clinton said. 
 He said the restaurant is open  
 for delivery via Uber Eats, Postmates, 
  Seamless and Grubhub. 
 Takeout, with limited indoor  
 dining, starts on Sept. 30. 
 Hours are: Monday – Thursday  
 10:30 am – 8:30 pm; Friday  
 – Saturday 10:30 am – 9:00 pm;  
 and Sunday 10:30 am– 7:30 pm.
